Filipinos are fond of desserts. Cathedral window is one of the most desired desserts especially during Christmas season. Here are the steps and recipe on how to make a Cathedral window:
Ingredients:
-4 packs of knox unflavored gelatine powder
-1 cup of pineapple juice
-1 cup all purpose cream
-1 cup cold water
-1 can of condensed milk
-1 can of evap milk
-1/2 cup sugar
Procedure:
Base Gelatine:
-transfer 1 cup cold water in a pan and add knox gelatin.
-dissolve gelatine completely.
-cook over medium-low heat until it simmers.
-stir continuously.
-when gelatine liquid simmers, add 1 cup of pineapple juice.
-add 1 can evap, 1 can condensed, 1 cup all purpose cream.
-add 1/2 cup sugar.
-when sugar is dissolved turn off heat.
-transfer cooked gelatine mixture in a bowl and refrigerate until it thickens.
Flavored Gelatine:
-add 6 cups of tap water to 1 pack of Mr. Gulaman. If you want just a portion of it, adjust it proportionately (e.g.: 2 cups for 1/3 mixture of gelatine powder in a single pack).
-dissolve it completely.
-bring it to simmer while stirring continuously.
-pour on a separate container for each flavor.
-cool to set.
-cut it into cubes when it has already been set and set aside.
Final Touches:
-when the gelatine mixture (Base gelatine) has thickened, add the flavored gelatine, mixing it.
-transfer into mould and refrigerate until set.
-Serve chilled.
