Fluffy Home Made Puto (Steamed Filipino Rice Cake)



Puto is a favorite treat here in the Philippines.  The usual version uses rice flour.
This version assures you that you will have a fluffy puto in just a few minutes using an ordinary flour in your kitchen!


Ingredients

1 cup of flour
1 tsp of baking powder
1/4 cup of butter, softened (not melted), you may use margarine
3/4 c. of milk
5 tbsp of sugar
4 egg whites
slices of cheese (preferably quickmelt) and itlog na pula (salted egg)

Instructions

1. In a mixing bowl, sift together the flour and baking powder.
2. In another bowl, you have to cream the butter or margarine after adding 3 tbps of sugar.
3. Add the flour and milk alternately into the butter and sugar mixture.
4. In a separate bowl, beat the egg whites into a STIFF PEAK FORM. (you may opt to add a very little cream of tartar but this is optional).  In our case, I didn't add that one.  You need to use an electric mixer to speed up the process, but you may opt to use a wire whisk too. When soft peaks form, add the remaining 2 tbps of sugar.
5. Fold the beaten egg whites into the mixed wet and dry ingredients gently(flour, milk mixture)
6. Fill the puto molds until 3/4 full.  Top with cheese slices and itlog na pula (Salted egg).
7. Steam the puto for 20 minutes.  Make sure to put a cotton cloth/katsa on the aluminum steamer (to prevent the water during the condensation to go into the puto)
8. Cool before removing from the molds.




Cooking time: 45 minutes
Yields: 12 to 15 cakes (you can increase the ingredients if you want more puto)
