Brazo de Mercedes Cupcakes



Filipinos love desserts.

I will be sharing our receipe for making Brazo de Mercedes Cupcakes :)

Ingredients

For the merengue base:
10 egg whites
1 tsp cream of tartar
3/4 cups caster or granulated sugar

For the custard base:
10 egg yolks
lemon juice (1 tsp)
1 tsp vanilla
14 ounces condensed milk (approximately 1 can)
confectioner's sugar and a little cocoa (optional) for sprinkling the merengue

Procedure

1. Preheat oven to 325 to 350 degrees Fahrenheit (on our case, I use 325 Degrees Fahrenheit or 177 degrees celsius, I am using a conventional gas oven. While pre-heating, on a separate bowl, start beating the separated egg whites and cream of tartar until soft peaks form.
2. Add the sugar little by little until still peaks form.
3. Put the beaten egg whites (make sure it was still to form a design) on a frosting bag and get the desired design you want (round frosting tip in our case)
4. Place the cup liners into a lightly greased cupcake pan.  Add the beaten egg white by frosting it on each of the cupcake liner.
5. Put the frosted merengue into the oven and bake for 20 to 22 minutes or until the top part get a golden brown color.  Please take note that baking varies depending on the size, and kind of oven. On our case, I baked it for around 35 to 40 minutes.
6. While baking, make the custard by mixing the egg yolks and condensed milk over a pan (medium heat) until it thickens. 
7. Add the vanilla and lemon.
8. Set aside and let it cool.
9. Remove the baked merengue into the oven and let it cool.  Then sprinkle a generous amount of confectioner's sugar.
10. Add the custard over the baked merengue.  You may opt to put the custard as a frosting (use different designs), just make sure it has completely cool down.

Cool it and serve.

Yields 18 to 24 cupcakes (depending on your frosting).
